Tuscan Castagnaccio

Castagnaccio is a typical Tuscan sweet made with local chestnut flour. In the Appennine area small pieces of rosemary are placed on top.
Ingredients for 4 persons:
- 500 gr. sweet chestnut flour
- ½ glass extra-virgin olive oil
- 50 gr. chopped pine nuts
- 50 gr. sultanas
- rosemary
Soak the grapes in lukewarm water.
Pour the chestnut flour in a bowl then the salt, sugar, the olive oil and
the milk a little at a time while stirring with a wooden spoon.
Dilute the mixture with a little water until obtaining a soft dough.
Add the grapes and the pine nuts.
Mix the ingredients stirring continuously.
Grease a cake pan with extra-virgin olive oil and sprinkle it with flour.
Pour the mixture into the cake pan, brush some extra-virgin olive
oil onto its surface and add some
Cook in a preheated oven at 150°C for about an hour.
